Chicken Yakitori

Yakitori are traditional style Japanese kebabs usually served by street vendors accompanied by a nice cold beer.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: Serves 4 to 6

Ingredients:

  • 2 pounds chicken breast fillets, trimmed of fat and cut into bite-sized pieces
  • 1 cup soy sauce
  • 1/2 cup sake or dry sherry
  • 12 scallions, dark green tops removed and cut into 2 inch pieces
  • 2 tablespoons chives
  • 1 tablespoon fresh ginger root, peeled and grated
  • 2 teaspoons sugar
  • 10 bamboo skewers soaked in cold water

Preparation:

Combine 1/2 cup soy sauce with sake (or dry sherry), ginger and chives. Mix well. Place chicken pieces and marinade in resealable plastic bag. Toss to coat and refrigerate for about 1 hour. Preheat grill. Remove chicken from marinade and thread onto skewers alternating with the scallions. Brush with remaining marinade and place on hot grill. Cook until chicken is done (about 4 to 8 minutes turning once). Remove and serve with 1/2 cup hot soy sauce for dipping.
