This brine can be used on any kind of poultry and pork. It gives a sweet, maple flavor to meats.

Ingredients
  • 4 quarts/3.8 liters water
  • 2 cups/475 mL dark brown sugar
  • 1 cup/240 mL soy sauce
  • 1 cup/240 mL maple syrup
  • 3/4 cup/180 mL sea salt
  • 5-6 whole cloves garlic, peeled
  • 6 whole bay leaves
  • 3 large sprigs of thyme
  • 2 teaspoons/10 mL whole peppercorns
  • Prep Time: 15 minutes
  • Cook Time: 90 minutes
  • Total Time: 105 minutes
  • Yield: Makes about 1 gallon of brine
Preparation

Place 2 quarts/1.9 liters of water and other ingredients in a large pot and bring to a boil, dissolving sugar and maple syrup. Remove from heat, add remaining 2 quarts/1.9 liters and allow the brine to cool completely before using.
