A great veggie burger for those looking for an alternative to the traditional hamburger. These portobello burgers are easy to prepare and quite delicious.

Ingredients
  • 4 medium portobello mushrooms, stems removed and cleaned
  • olive oil
  • salt and pepper to taste
  • 4 hamburger buns
  • 1 large tomato, sliced
  • 1 small red onion, sliced
  • 1 1/2 cups/360 mL baby arugula leaves
  • for sauce:
  • 1/2 cup/120 mL balsamic vinegar
  • 2 tablespoon/30 mL brown sugar
  • 1/4 teaspoon/1.25 mL powdered ginger
  • 1/2 teaspoon/1.25 mL powdered cloves
  • pinch of salt

  • Total Time: 37 minutes
  • Yield: Makes 4 burgers
Preparation

To prepare sauce: bring balsamic vinegar and brown sugar to a boil over high heat.  Reduce heat to low, add ginger powder, a pinch of salt,and clove powder.  Let mixture simmer for 8 minutes, stirring often.  Once mixture has reduced a bit and coats the back of a spoon well, remove from heat and let cool to room temperature.

Preheat grill for medium-high heat.  Remove stems from mushroom and clean with a dampened kitchen cloth or paper towels.

 Brush each with olive oil and season with salt and pepper. Place mushrooms onto grill and cook for 5-6 minutes per side.  Turn a few times during cooking process to ensure that mushrooms are not burning.  Once cooked, remove from heat and place portobello onto hamburger buns, drizzle liberally with balsamic sauce, top with arugula, tomato, and red onion slices.
