Chicken broth makes the perfect base for any poultry brine. Choose a good broth without too much salt and the flavor will be fantastic.

Ingredients
  • 1 large bag of ice
  • 1 gallon/3.8 liters hot water
  • 2 quarts/1.9 liters chicken broth
  • 1 pound/450 g table salt (non-iodine)
  • 1 pound/450 g honey
  • 1/4 cup light brown sugar/60 mL
  • 2 tablespoons/30 mL whole cloves
  • 4-5 large bay leaves
  • Prep Time: 7 minutes
  • Cook Time: 10 minutes
  • Total Time: 17 minutes
  • Yield: Makes 1 1/2 gallons of brine
Preparation

Combine salt and hot water until it dissolves. Add honey, sugar, broth, bay leaves, and cloves to mixture. Once thoroughly mixed, add ice. Brine for 1 hour per pound/450 g.

Thoroughly rinse all the brine from the turkey before cooking. Otherwise there will be a salty flavor to the turkey. For a more detailed explanation, see my article on brining turkey.
