Chicken broth makes the perfect base for any poultry brine. Choose a good broth without too much salt and the flavor will be fantastic.
Ingredients
- 1 large bag of ice
- 1 gallon/3.8 liters hot water
- 2 quarts/1.9 liters chicken broth
- 1 pound/450 g table salt (non-iodine)
- 1 pound/450 g honey
- 1/4 cup light brown sugar/60 mL
- 2 tablespoons/30 mL whole cloves
- 4-5 large bay leaves
- Prep Time: 7 minutes
- Cook Time: 10 minutes
- Total Time: 17 minutes
- Yield: Makes 1 1/2 gallons of brine
Preparation
Combine salt and hot water until it dissolves. Add honey, sugar, broth, bay leaves, and cloves to mixture. Once thoroughly mixed, add ice. Brine for 1 hour per pound/450 g.
