This is a simple way to grill a butternut squash. Oil and grill this squash and then serve it up with this Japanese-inspired dressing.
Ingredients
- 1 large butternut squash, peeled and thinly sliced
- 1 tablespoon/15 mL oil
- Dressing:
- 2 tablespoons/30 mL soy sauce
- 2 tablespoons/30 mL toasted sesame seeds
- 2 cloves garlic, minced
- 1 tablespoon/15 mL miso paste
- 1 tablespoon/15 mL sugar
- 1 teaspoon/5 mL vegetable oil
- 1 teaspoon/5 mL sesame oil
- 1-2 spring onion, finely chopped (optional)
Preparation
Place butternut squash in a shallow dish, coat well with oil, and set aside. Combine all remaining ingredients, except spring onion, in a small saucepan. Allow mixture to come to a boil, then add spring onions. Remove from heat and allow to cool. Preheat the grill for medium heat. Place squash on the grill and allow to cook for 4 to 5 minutes per side. Remove from grill and top with dressing.
