This prime rib is delicious and tender. It's a little time consuming, but well worth the wait because the slow, smoky roasting method takes the flavor to a whole new level. A perfect main course for any special occasion.
Ingredients
- 1 standing rib roast, about 5 pounds/2.3 kg
- 11/2 cups/360 mL bourbon
- 1 tablespoon/115 mL sea salt
- 1 teaspoons/5 mL garlic powder
- 2 teaspoons/10 mL onion powder
- 2 teaspoons/10 mL paprika
- 2 teaspoon/10 mL coarse ground black pepper
- smoking wood, preferably hickory

Preparation
Prepare smoker for an 8 cooking time. Soak wood chips in bourbon and 1/2 cup/120 mL water. Rub roast with seasonings and place on the top grate. Place a few handfuls of wood chips onto the fire. Close lid and check every 40-50 minutes. Be sure to add more wood chips every time the roast is checked. Smoke roast for about 8 hours or until internal temperatures reaches between 140-145 degrees F. (60 to 63 degrees C.) Allow to rest before carving.
