McDonald's created a cultural phenomenon when they introduced the McRib Sandwich and brilliantly it appears only for limited amounts of time. That sandwich relies on a formed rib looking patty made from pork scraps. This version starts with Baby Back Ribs, cooked however you prefer, and piles on grilled red onions, pickles, and barbecue sauce, all sandwiched between garlic cheese toast. This McRib is the better sandwich and will keep you off the McRib trail forever.

 

At the heart of this sandwich is a full rack of baby back ribs. They will have more flavor if they are slow smoked, but I'm not going to judge. If you need a method for cooking ribs try the one of these that matches your equipment:

The secret with the ribs for this sandwich is to overcook them so that they are literally falling off the bone. Sandwiches with bones are not good.

You will also need:

  • An unsliced loaf of bread
  • One stick of softened butter
  • 1/3 cup finely grated Parmesan
  • 1 teaspoon garlic powder
  • A jar of good dill pickle slices
  • One or two red onions, cut into 1/2-inch slices
  • Olive Oil
  • Barbecue Sauce
