Grilled Pineapple Dessert

This is a fantastic dessert recipe that is also very fast. You might want the pineapple slices to flare-up the second they hit the grill and while everyone is close by. This really impresses the guests. You can substitute rum for the tequila if you are so inclined.

Yield: Serves 6 to 8

Ingredients:

  • 1 large pineapple, peeled, cored and cut into 1 inch thick slices
  • 3/4 cup tequila
  • 3/4 cup brown sugar
  • 1 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • vanilla ice cream

Preparation:

Mix tequila, sugar, vanilla and cinnamon together until sugar is dissolved. Preheat Grill. Place pineapple on grill (You could put the pieces on skewers to make grilling easier). Baste with tequila mixture while grilling. Turn occasionally. Grill about 10 minutes. Serve hot topped with a scoop of ice cream.

Preparation:

Combine ingredients for salmon rub. Squeeze the juice of 1 lime over both sides of the salmon fillet. Sprinkle salmon rub over salmon fillet, coating evenly. Preheat grill. Cut open avocado and remove flesh. Crush to an even mixture. Add ranch dressing and mix well. Grill salmon over a medium high heat. When done salmon will be easy to flake and opaque through the middle. Break salmon into small pieces. Distribute salmon among warmed tortillas. Top with avocado dressing and tomatoes and red onion.

In the mood for a Caribbean meal? Try grilling this tilapia dish. The poblano pepper is mild so if you want to really kick up the heat, try adding a little serrano or habanero pepper.

Ingredients:

  • 4 tilapia fillets, about 6 ounces
  • 1 cup white onion, chopped
  • 1 cup red or orange bell pepper, julienned
  • 2 poblano peppers, seeded and chopped
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 3 tablespoons fresh cilantro, chopped
  • 3 tablespoons Jerk Seasoning
  • 2 tablespoons fresh lemon juice
  • salt and black pepper
  • 4 large pieces of aluminum foil

Preparation:

Preheat grill medium high heat. Place one piece of tilapia in each piece of foil. Combine, garlic, olive oil, cilantro, lemon juice, and jerk seasoning in a small bowl. Brush well with mixture on both sides of fish. Place equal portions of onion, bell pepper, and poblano on each piece of fish. Season lightly with salt and black pepper. Crimp edges of foil over and seal packets well. Place on grill and cook for 10 minutes, turn, and cook for a remaining ten. When Fish no longer appears opaque and vegetables become tender, remove from heat. Allow packets to stand for 5 minutes before opening.

Grilled Dijon Rib Roast

This is a delicious recipe for rib roast. The combination of Dijon mustard, herbs, and sour cream gives this roast a unique flavor. Enjoy with your favorite grilled sides.

Ingredients:

  • 1 rib roast, about 4-5 pounds
  • 2 cups sour cream
  • 1/2 cup red wine
  • 1/2 cup Dijon mustard
  • 1/4 cup lemon juice
  • 2 shallots, chopped finely
  • 2-3 cloves garlic, minced
  • 1 green onion, finely chopped
  • 2 tablespoons ranch dressing
  • 2 tablespoons milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme, crushed
  • 1/2 teaspoon dried rosemary, crushed
  • 3-4 cups mesquite wood chips

Preparation:

Combine Worcestershire sauce, 1/4 cup of Dijon mustard, wine, shallots, garlic, lemon juice, herbs, salt, and 1/3 cup of water in a bowl. Place roast in a large resealable plastic bag. Pour marinade over meat, seal bag, and allow to marinate in refrigerator for 8-12 hours. Soak wood chips for at least 1 hour before grilling.

Preheat grill for medium-low heat. Remove meat from plastic bag and reserve marinade. Insert meat thermometer into roast. Add wood chips according to manufacturer's recommendations. Place rib roast on grill rack. Be sure to have a drip pan filled with an inch of water underneath. Cook for 2 hours or more, adding fresh wood chips every 30 minutes, and brushing with reserved marinade for first half of cooking time. When done, remove roast from grill and let stand for 20 minutes before carving. While roast is resting. Combine sour cream, 1/4 cup Dijon mustard, milk, green onion, and ranch dressing in a bowl. Serve on top of slice rib roast.

Grilled Crab

You probably don't think of grilling things like crabs but the combination of the high direct heat with the flavor of the grill makes this one of the best ways to cook most any kind of shellfish.

Prep Time: 15?minutes

Cook Time: 10?minutes

Total Time: 25?minutes

Yield: Serves 4

Ingredients:

  • 2 large Dungeness crabs (live)
  • 1/4 cup white wine vinegar
  • 2 1/2 teaspoons sugar
  • 2 tablespoons olive oil
  • 1 tablespoon ginger minced
  • 1 jalapeno chili, minced with the seeds removed
  • 1 tablespoon cilantro minced
  • 1 medium tomato, chopped

Preparation:

Mix vinegar, oil, ginger, jalapeno, garlic cilantro and tomato in a bowl. Bring a large pot of water to a boil. Drop crabs, one at a time, head first into boiling water. Boil, then reduce heat and let simmer for 5 minutes. Remove crabs from water. Pull of triangular tab from belly. Lift off the shell. Clean entrails and gills from crab and wash and drain. Place on preheated grill. Cook with lid closed, brushing with mixture occasionally. Turn over half way through grilling. Crabs are done when the meat in the leg is opaque. About 10 minutes. Place on serving dish and spoon remaining mixture over crabs. You can replace the shells before serving if you wish.

If the thought of live crabs is too much for you buy frozen crabs.

Grilled Tenderloin Barbecue

This is a fantastic way to get pulled pork without a smoker and several hours of cooking time. The pork tenderloin is already pretty tender so it doesn't need to be smoked to get it right.

Prep Time: 20?minutes

Cook Time: 4?hours

Total Time: 4?hours, 20?minutes

Yield: Serves 6

Ingredients:

  • 2 pounds pork tenderloin
  • 4 tablespoons paprika
  • 3 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 2 tablespoons salt
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ground oregano
  • 1 tablespoon black pepper
  • 1 tablespoon sugar
  • 2 teaspoons cayenne
  • 6-8 hamburger buns
  • barbecue sauce

Preparation:

Mix together dry ingredients and rub into tenderloin. Let sit for 4 hours. Preheat grill. When grill is hot place tenderloin on grill and cook indirectly for about 35 minutes, turning occasionally, careful not to dislodge too much of the rub. When done transfer to a cutting board and cut into thin slices. Serve on buns with warmed sauce. Optionally top with coleslaw.

  • 2 teaspoons olive oil

Turn chicken over and place cheese and tomato slices on top. Cook for an additional 5-6 minutes. Remove from heat, allow to sit for 1-2 minutes and place basil leaves on chicken before serving.

Grilled Feta and Tomato Pizza

This is a simple, yet delicious grilled pizza recipe. Remember to use tomatoes that aren't overly ripe and let the pizza cook long enough to get the feta melting.

Prep Time: 15 minutes

Cook Time: 6 minutes

Total Time: 21 minutes

Yield: Makes 4 small pizzas

Ingredients:

  • 1 32 ounce package frozen bread dough
  • 6 large tomatoes, cut into thin slices
  • 1 cup feta cheese
  • 1/2 cup fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • olive oil

Preparation:

To prepare dough: Thaw dough and split into 4 equal parts. (Or make your own: Grilled Pizza Crusts.) Roll each portion into a 1/4 inch thick disc. Brush with olive oil and place on the grill. Cook one side only for 2-3 minutes. Remove from heat and set aside.

Brush tomatoes with oil and grill on medium heat for 1-2 minutes, making sure not to turn them. Combine feta cheese with basil, salt, and black pepper. Place grilled tomatoes on the cooked side of pizza crust. Top off with feta cheese mixture. Place pizzas back on the grill. Cook raw dough side for 4 minutes. Remove from heat and serve.

  • 1 small zucchini

Preparation:

Preheat grill for medium heat. Cut zucchini and squash lengthwise into 1/4 inch slices. Cut bell pepper into 1/2 inch strips. Place on a lightly oil grill grate or vegetable basket. Cook for about 5 minutes, turning occasionally. Remove from grill. Top 4 bread slices with mayonnaise, grilled veggies, fresh basil leaves, and cheese. Close with remaining bread and place on grill. Salmon Grilled with Fennel
