New Book: Slow Fire: The Beginner's Guide to Lip-Smacking Barbecue

Twenty years ago Ray Lampe, aka Dr. BBQ, entered a small barbecue competition just to see if he was any good. Turns out he was, and still is. From award winning to competitor to award willing author, Ray has become a mainstay in the barbecue world and one of the most well known, and well liked. Taking his years of experience, Ray has written half a dozen books, starting with the modern classic, "Dr BBQ's Big-Time Barbecue Cookbook". For 2012 Ray has come out with Slow Fire: The Beginner's Guide to Lip-Smacking Barbecue. I got a chance to thumb through a proof of this book a few months back, and I have to say that this is one classy cookbook. Not only is it produced very well, but the content is straightforward and simply enough for any novice of barbecue, yet thorough enough to give you great barbecue with little experience. Whether you are new to barbecue or not, this is a great book.

Saber Cast 500 P R50CC0612

The Bottom Line

Looking for a reliable gas grill that is easy to use? This just might be the perfect grill. Forget all the talk about the infrared cooking system and the 24,000 BTUs under 500 square inches of primary grilling space. What makes this grill one of the best for the price is that it heats quickly, gets very hot, and cooks efficiently. Whether you are a serious griller or a first time outdoor cooking, the Saber Grills, don't flare-ups and actually reduce the chance of burning food. Yes, there is a lot of science and innovation behind the design, but that doesn't really matter. This is a basic grill for a basic price, but an excellent value.

Pros

  • Highly efficient heating
  • All stainless steel is high grade 304 stainless
  • High, even heating

Cons

  • Water will get inside the grill and drip pan if left uncovered

Description

  • Three 8,000 BTU stainless steel tubular burners under stainless steel infrared emitters in separate and independent heat zones
  • 500 square inches of primary cooking area for a total of 675 square inches of grilling space
  • 24,000 BTU maximum output from the main burners
  • Individual electronic (AA-Battery) ignition
  • Cast aluminum, powder coated and 304 stainless steel construction
  • Stainless steel U-shaped folded sheet metal cooking grates
  • Individual temperature gauges for each burner mounted above burner knobs
  • Two internal halogen lights (grill must be plugged in for lights to work)
  • Propane tank and cover sold separately
  • Made in China by Saber Grills and sold through specialty retailers

Guide Review - Saber Cast 500 P 3-Burner Gas Grill Model# R50CC0612

When I described what to look for in a gas grill between $500USD and $1,000, I said to avoid grills covered in stainless steel and loaded with features. The Saber Cast 500 P has stainless steel (304 grade) burners, cooking grates, infrared emitter, and control panel. The rest of the grill is enameled steel and painted cast aluminum. As for features, there aren't any. This is a basic, 3-burner gas grill. The fact that it is infrared gives it incredible efficiency with high and even heat. Other than that, you shouldn't worry or really care that this is an infrared grill.

In this grill the burners are in separate boxes so that heat generated by each burner has a heat zone of its own. The burners focus their heat at a stainless steel sheet of perforated metal that sits directly under the U-shape cooking grates. The perforations in the infrared emitter are under the U's in the cooking grate. This means that virtually no drippings get through and no hot air reaches the food. Cooking is completely by contact with the hot grates and heat radiated by the metal emitter and grates.

While all this might sound technical, the practical up shot is that this is a very easy grill to use. The design makes flare-ups virtually impossible. The grates get hot enough to give you good grill makes and to sear a steak, but the distribution of the heat reduces the chances of foods burning. Because the grill is completely infrared and the flow of air from the burners is channels away from foods reducing the drying affect that grills can have. I'm not going to say that this gas grill is foolproof, but it is pretty close.

As with any good grill, there are a few little issues I have with this one. The most notable is the rain. Of course you should cover your grill, but we all know that many people won't, or won't all the time. When rain falls on the hood of this grill it runs down the front and some of it pours inside, filling the full width drip pan. Since very little (and I mean very little) drippings will ever reach the drip pan it won't make the same kind of mess that happens when water gets inside other grills, but it is still an annoyance.

Saber grills are not a mass market product and are only available through specialty retailers. See the Saber Website to find a dealer near you.

Char-Broil Infrared 463225312

The Bottom Line

This Char-Broil gas grill uses their Quantum technology and is an innovative approach to an inexpensive, all infrared gas grill. This unit uses a simple sheet of perforated stainless steel to convert the output of a standard gas burner into infrared. This unit has four burners that put out only 32,000 BTUs under 500 square inches of cooking space but can still reach temperatures around 700 degrees F. You also get the standard Char-Broil side burner. Unfortunately this grill is constructed from low quality and thin stainless steel limiting its durability. Each burner has an individual temperature gauge.

Pros

  • High, even heatin
  • Individual burner temperature gauge

Cons

  • Low quality 430 stainless steel and painted steel construction
  • Low quality stainless steel burners
  • "Infrared" components prone to rusting

Description

  • Four 8,000 BTU 400 series stainless steel tubular burners under "infrared" diffusers
  • 500 square inches of primary cooking area for a total of 680 square inches of grilling space
  • 32,000 BTU maximum output from the main burners
  • 13,000 BTU standard side burner under a flush mounted cover
  • Unique complete "infrared" design for high temperature cooking
  • 430 stainless steel and painted steel construction
  • Electric (AA-battery) igniter
  • Individual temperature gauges for each burner mounted above burner knobs
  • Propane tank and cover sold separately
  • Made in China by Char-Broil exclusively for Sears Stores

Guide Review - Char-Broil 4-Burner Infrared Gas Grill Model# 463225312

Infrared remains a priority for Char-Broil and this Infrared Grill, exclusive to Sears stores, is similar to the Quantum infrared grills sold at Lowes. This 4-burner version comes in at a low price (around $500 but frequently on sale for less) and loses some of its stainless steel in favor of cheaper, painted steel. Probably the most unique feature is the individual temperature gauges on each burner. Since heat builds up under the infrared plate this grill can tell you the cooking temperature at the grate level. This isn't an effective way of telling your grill temperature for indirect grilling, but it will tell you how hot your steaks are cooking at.

This four burner gas grill puts out a maximum of 32,000 BTUs under 500 square inches of primary grilling space. This seems low, but because of the efficiency of infrared this grill can still hit temperatures around 700 degrees F. In good working condition this grill can put out a high, even heat that is great for searing. Additionally you get a 13,000 BTU side burner. This is the standard Char-Broil side unit, and while flimsy it is functional. There is no rotisserie burner on this unit, but that really isn't necessary.

There are two primary problems with this grill. First, this model, it is made from low grade (400 series) stainless steel. This limits the durability of the grill and will cause it to discolor and rust early. You can't count on this grill lasting.

The other problem with this grill is the "infrared" system. Basically what makes this grill and infrared grill is a thin sheet or perforated stainless steel (also 400 series). This sheet needs regular "gentle" cleaning according to Char-Broil to keep the holes in it clear. If this sheet gets too dirty the grill will not work properly. You need to be very careful in maintaining this grill to keep it working.

Hamilton Beach 5-Burner

The Bottom Line

If you have the money and access to the market you can call up a factory in China to build you a gas grill. Yes, it will be generic is construction, quality, and features, but you can stamp your name on it and call it yours. This is what Hamilton Beach has done with this gas grill. While loaded with features, this $500USD gas grill, sold at Sears, is very typical and nothing about it will make it stand out for either quality or performance.

Pros

  • High powered side burner
  • Dedicated smoker box with burner

Cons

  • Low heat output for the size
  • Lower quality components and construction

Description

  • Four 10,000 BTU stainless steel tubular main burners
  • 442 square inches of primary grilling space for a total cooking area of 598 square inches
  • 40,000 BTU maximum output from the main burners
  • 13,000 BTU standard side burner under a flush mounted cover
  • 6,500 BTU smoker burner with closed smoker tray
  • Two porcelain coated cast iron cooking grates with interchangeable grill inserts including a griddle and vegetable basket
  • Powder coated and 430 stainless steel construction
  • On knob push and turn piezoelectric ignition
  • Propane tank, cover, and optional rotisserie kit sold separately
  • Made in China for Hamilton Beach

Guide Review - Hamilton Beach 5-Burner GrillStation

For 2012 Hamilton Beach, sellers of so many appliances and home products, has entered into the gas grill business with this unit, available at Sears. Of course in these days most anyone can call up a factory in China and have a product produced. When you have a name like Hamilton Beach it is particularly easy. This gas grill is very typical of grills these days in this price range. The firebox construction, flame-tamers, burners, and pretty much every other component on this grill comes out of the standard supply box of gas grill parts. This doesn't necessarily make this a bad grill, it just makes it undistinguished from most of the grills this one will be sitting next to.

The Hamilton Beach 5-Burner GrillStation offers you four primary burners, generating up to 40,000 BTUs under 442 square inches of primary cooking space. In addition there is a standard but powerful 13,000 BTU side burner under a flush mounted cover and a 6,500 BTU smoker burner with a dedicated smoker drawer. The cooking grates are a medium weight porcelain coated cast iron, and the burners are standard and typical stainless steel tubular design. The flame tamers and fire box are porcelain coated steel sheet metal.

All in all, this is an average gas grill that lists at around $500USD, but will probably get marked down by a slowly failing Sears during the season. While loaded with extras, there really isn't anything that will make this grill stand out other than the perceived quality that the Hamilton Beach name might bring to it. What Sears gets out of this product is a name brand from a company that doesn't own factories.

Brinkmann 4-Burner 810-3420-W

The Bottom Line

This is about as close as you are going to get to a shiny, stainless steel gas grill for under $150USD. This 4-burner grill pumps out 48,000 BTUs under 477 square inches, which is good enough to hit high temperatures. The 12,000 BTU side burner is typical and nothing special. Of course, a side burner is a gimmick for most people. The problem with this grill is the poor construction and flimsy materials. This gas grill, sitting on the floor of some Walmarts is there to entice you with a big cooking area and a shiny lid. What it won't do, is grill well or last.

Pros

  • Full function gas grill for a low price (under $150USD)
  • Good heat output from the main burners

Cons

  • Low quality materials, including burners
  • Lightweight construction

Description

  • Four 12,000 BTU stainless steel (400 series) tubular burners
  • 477 square inches of primary grilling space for a total cooking area of 674 square inches
  • 48,000 BTU maximum output from the main burners
  • 12,000 BTU stainless steel capped side burner under a flush mounted cover
  • Porcelain coated steel wire cooking grates
  • Piezoelectric igniter on knobs
  • 400 series stainless steel and painted sheet metal construction
  • Cover and propane tank sold separately
  • Manufactured by The Brinkmann Corporation in China and sold exclusively for Walmart

Guide Review - Brinkmann 4-Burner with Side Burner Model# 810-3420-W

This is a large gas grill for a good price. At around $150USD this Walmart exclusive Brinkmann gas grill is sure to be popular amongst those who don't do their research. The 4 stainless steel (400 series stainless) burners give you a lot of versatility in grilling both direct and indirect. The 477 square inches of primary grilling space provide ample cooking space and the 48,000 BTU output will give you almost enough heat for high temperature grilling. With the 12,000 BTU stainless steel capped side burner is powerful enough to heat a small pot. This unit only lacks a full rotisserie system (though can get a spit and fork rotisserie rod for it).

Unfortunately this grill is built with low quality materials like the 430 stainless steel tubular burners and the plastic knobs and handles. The lightweight construction doesn't improved the quality either. The shiny stainless steel will need very regular cleaning and care to keep it shiny. There are many more better quality gas grills near this price range that you should look into before this grill.

Top 10 Vinegar Barbecue Sauce Recipes

Vinegar based barbecue sauces come in a wide number of varieties and most people who use and love these sauces are pretty militant about how they should be prepared. Some come with tomato, others with mustard, some are spicy hot, while others are not. One thing for certain, a good vinegar barbecue sauce should give foods (particularly pork) a tangy flavor. If you like that rich flavor then these are the sauces for you. As I said, these are great sauces for any kind of barbecue pork, but are good for so many things. Experiment and I promise you won't be disappointed.
