Passover Brisket

This is the traditional method for making Passover Brisket. No it doesn't go in the smoker. Use a good Dutch oven to cook this brisket.

Prep Time: 30?minutes

Cook Time: 1?hour, 30?minutes

Total Time: 2?hours

Ingredients:

  • 2 tablespoons vegetable oil
  • 6 pounds beef brisket
  • 1 onion, chopped
  • 2 cloves crushed garlic
  • 1 (1 ounce) package dry onion soup mix
  • 1 pound dried apricots

Preparation:

1. In a large heavy skillet, heat oil over medium high heat. When the oil is hot, brown the beef brisket on all sides. If the brisket is too large, cut it in half first, and brown in two stages. Place the brisket in a large Dutch oven with a lid.

2. Add onions to the drippings in the skillet. Saute over medium heat until the onions are beginning to brown. Stir in garlic, and cook for 2 or 3 more minutes. Pour over the brisket in the Dutch oven.

3. Empty one package of dry, instant onion soup mix over the browned onions and meat. Arrange all of the apricots on top of the soup mix. Pour enough water around outside of brisket, not on top, to cover the sides of brisket. Cover.

4. Bake at 325 degrees F (160 degrees C) for 1 hour. Check liquid; if dish is starting to look dry, add a bit more water around meat. Cover, and cook another hour. Remove lid, and stir apricots into gravy. Leave uncovered, and cook for another hour. Stir gravy again, and add more water if the gravy is too thick. Meat should be very tender; if necessary, bake for an additional 1/2 hour. Cut across grain to serve.

The 4-burner Brinkmann gas grill from Target is a standard grill these days. The 12,000 BTU side burner gives you an accessory and the bright red color (Target red) makes it stand out. There are a lot of Brinkmann 4-burners on the market, most of them for around $200USD. This version gets a little heavier construction and a $260USD price. While this one seems to be a better built, all these grills suffer from cheap burners and poor quality construction. This grill will probably give three years of service, but don't consider it a long term investment.

Guide Review - Brinkmann 4-Burner Porcelain Model# 810-1450-0

This Target red 4-burner gas grill from Brinkmann is labeled porcelain because of the porcelain coated lid. I can't necessarily say that this is a selling point, but it does make the grill look pretty and it makes Target happy to have this color on a gas grill. The trick with this grill, or any gas grill for that matter is to look inside. While this grill sells for more than most of the Brinkmann 4-burner grills on the market this year.

The Brinkmann 4-Burner Porcelain has a 12,000 BTU side burner under a flush mounted cover and individual on knob piezoelectric igniters. As long as these igniters work this grill is easy to use, simply turn the knob and it lights. Unfortunately these igniters don't have the best reputation and once one or more fails you have the swoosh problem of gas jumping to a lit burner, or you are sticking long matches down the grate to get them lit.

The problem with this grill is that it will work when you get it home. If you keep it clean and covered it might work for a few years. Then again it might not. The burners are thin and the other internal components are equally low quality. Grease, marinades, and the elements will wear away at the insides and the grill will rust. My recommendations in the price range of this grill is something smaller, with fewer burners, and if you really don't need it, without the side burner.

This is a simple and basic gas grill for a good price. At around $200USD this Home Depot exclusive Brinkmann gas grill is sure to be popular amongst those who don't do their research. The 4 stainless steel (400 series stainless) burners give you a lot of versatility in grilling both direct and indirect. The 486 square inches of primary grilling space provide ample cooking space and the 48,000 BTU output will give you plenty of heat. With the 12,000 BTU cast iron cap side burner you get the ability to do virtual any cooking task. This unit only lacks a full rotisserie system (though can get a spit and fork rotisserie rod for it).

Listed among the "features" of this grill are a side table mounted bottle opener and a flip up front panel that can be used as a condiment table should you need it. This just tends to make this gas grill more gimmick than practical grill.

Unfortunately this grill is built with low quality materials like the 430 stainless steel tubular burners and the plastic knobs and handles. The lightweight construction doesn't improved the quality either. There are many more better quality gas grills near this price range that you should look into before this grill.

Infrared: Good or Gimmick?

It has been credited with saving the modern barbecue industry. They have been described as the microwave of the outdoor kitchen. Promising incredible temperatures, faster cooking, and phenomenal searing power, infrared grills and burners are quickly becoming the norm instead of the accessory. Many gas grills have infrared searing burners, or have simply converted completely to infrared. The question is, does it really make a better steak, not to mention chicken, fish or vegetables. infrared grills can cost many times more than a standard gas grill. Many of them have more complicated components and require more maintenance and care. People will tell you that this is the energy of the sun, but it is also the same technology of restaurant heat lamps. Advocates say that infrared causes less drying, but the high temperatures can cause more burning. So, if the goal is great grilling the question has to be:

What limits it, is a low BTU output from the main burners when compared with the size and low powered side burner. While still an impressive grill, built to last there are some shortcuts made to accommodate the price versus size and features.

Napoleon gas grills are amongst the best you can buy, but they tend to be expensive. This gas grill is a 3-burner unit with an infrared rotisserie burner (but the rotisserie kit is extra but a dealer might cut you a deal).

If you are willing to sacrifice fancy for quality then this is definitely a gas grill to look at.

In reality, this grill doesn't grill differently than a standard grill. The problem is that this type of infrared requires extra care and is prone to rusting of the infrared "screen".

Thermoceramix is the next generation of heating element. In fact it isn't even an element. This spray on material creates heat under current making it possible to create heating surfaces of virtually any shape or size. Mustard Paint

This is an old style mustard-based barbecue sauce. This recipe is for a basting sauce used for smoking or grilling slabs of ribs, pork loins, pork butts, pork tenderloins, ham, chicken, or any meat of your choice.

Prep Time: 15?minutes

Total Time: 15?minutes

Yield: Makes about 6 cups

Ingredients:

  • 1 12-ounce can flat beer
  • 4 cups prepared yellow mustard
  • 1/2 cup dark brown sugar, packed
  • 1 tablespoon Louisiana-style hot sauce
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Preparation:

Combine all ingredients in a non-reactive bowl and store in an air tight jar in the refrigerator. This barbecue sauce will keep for several months. You can replace beer with lemon juice or liquor. You can also use the Dijon style mustard for the American mustard.

My preference is to use just 2 cups of prepared mustard, keep the other ingredients the same and substitute 2 Tablespoons of Real Lemon for the flat beer.

When ready to use, paint the mustard sauce on the meat or chicken and then put your favorite spice rub on. Grill or smoke.

Brisket from the Kitchen

Do you love barbecued beef brisket and don't have a smoker or even a backyard? Don't despair. There are alternatives. The secret to delicious barbecue brisket is in the low temperatures and slow cooking. You don't need a smoker to do this. With a dutch oven, slow cooker, or a kitchen oven, you too can make a great brisket meal.

Traditional barbecuers will disagree, but an important thing to remember is that brisket has been cooked low and slow for centuries without smoke. Walter Jetton, famed pit master and personal cook to President Johnson, prepared his brisket in a dutch oven. So don't let the diehards push you around.

The Meat: The problem with brisket is that it's tough. For generations this cut of beef was considered poor quality and usually turned into ground meat. But if you take the time to prepare it right, it can be one of the most delicious meals you've prepared.

The right way to cook a brisket is low and slow. This allows the meat to literally melt into a tender and delicious morsels. Expect to cook a brisket anywhere from 30 minutes to 2 hours per pound depending on the temperature. Typically, when oven roasting a brisket, the temperature is set to 300 degrees F., for 30 to 45 minutes per pound. When smoking a brisket, it is cooked at 225 degrees F., for 1 1/2 hours to 2 hours per pound. Keep it low and slow and it will be great.

Smoke: So what's missing? The smoke. This occurs when a beef brisket is placed in a smoker and cooked for hours in a smoke filled chamber. Preparing a brisket in a different environment causes a loss of smoke flavor. Of course, this can be replaced with products like liquid smoke and other ingredients. There is quite a bit of versatility with a brisket, so don't be afraid to experiment.

Moisture: One of the advantages to cooking a brisket in a dutch oven or crock-pot is that the juices are locked in. No need to worry about it drying out. When you cook a brisket in the oven, make sure to either wrap it in foil or baste it frequently to keep the top from drying out. If cooked (unwrapped) in the oven, turn the brisket over during the cooking time. Also, select a fully trimmed brisket if your method of cooking is indoor. If smoking, you need the untrimmed brisket with all it's fat to keep it moist. In the oven or crock-pot the added fat content is not needed.

Don't Boil: The problem is that in a pot the meat is going to sit in it's own juices. While this will keep the moisture on the meat, it tends to cause the meat to boil. Boiling doesn't produce the desired meat or result in good barbecue. If you can, it is best to keep the brisket off the bottom of the pot. A wire rack or roasting rack will work perfectly. Keep an eye on the liquid inside and drain it off if it comes into contact with the meat.

The Brinkmann 3-Burner at Home Depot for 2012 is a basic and inexpensive gas grill. Coming in around $170USD the only feature this grill has is a basic 12,000 BTU side burner. The construction is simple and the materials are cheap. If you are looking for a basic burger burner, then this isn't a bad choice.

The limiting factor here is the heat output. with 36,000 maximum BTUs under 416 square inches of primary grilling space, this isn't a powerful grill. Add to this the lightweight porcelain coated steel wire cooking grates and you don't have a lot of heat transfer. What heat you do get isn't very even and this grill will give you some flare-up issues. Learn to deal with this and you will be able to do some basic grilling without too much trouble.

Yes, there have been some cutbacks in materials to deliver this grill for the price, but the internal components are still good quality and designed to last longer than other, fancier grills.

This grill will last at least twice as long and will do a much better job of grilling with more even heating and greater temperature control.

Since this grill also has no extras you will get a grill and nothing more, though a rotisserie kit is available. While limited in size and function this grill is perfect for a small space and the person who really just needs to be able to grill up some chops or chicken pieces.
