Every year around this time warnings issue forth from consumer groups, government agencies and safety experts telling us that outdoor cooking equipment is for outdoor use only. As logical as this seems every year people drag gas and charcoal grills into their homes, sheds or garages to cook on or to heat a room. Unfortunately, this means many people die. Gas and charcoal grills and smokers can produce large quantities of Carbon Monoxide. Carbon Monoxide will kill you very quickly. So DO NOT use outdoor cooking equipment indoors or in enclosed spaces. Carbon Monoxide has no odor and can fill a room in minutes.

While you are at it you might want to pick up a Carbon Monoxide Detector just to be on the safe side.

Yield: Makes about 1 gallon of brine

Ingredients:

  • 2 quarts vegetable stock
  • 1/2 cup salt (3/4 cup Kosher or coarse salt)
  • 1/2 cup white sugar
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • 2 quarts cold water

Preparation:

In a large pot combine vegetable stock, salt, sugar, and herbs over a medium heat. Simmer for about 15 minutes until the salt is completely dissolved. Remove from heat and allow to cool. Add cold water.

Place turkey in a large plastic container. Pour brine over top, cover and refrigerate. Brine for 1 hour per pound.

Turkey: Smoking

For generations people have been dropping turkeys into the oven and roasting for hours. They use stuffings and little pop up timers. Guess what? You can make a great turkey this way, but wouldn't it be great to go one step further? Smoked turkey is more flavorful and tender than one roasted in the oven. Breaking away from tradition can be hard, but I'm here to walk you through the process.

The Basics:

Here's what you are going to do. You are going to smoke your turkey to an internal temperature of 165 degrees F. This means that the coldest part of the turkey is 165 degrees F. This isn't a suggestion. Test in at least two places (or more) and remember that turkey bones heat faster so keep the thermometer away from bone. Also, dark meat should be cooked to a higher temperature so worry about the breast, but make sure to check the thighs as well.

Run the smoker at temperature range of 235 degrees F to 250 degrees F. Plan on 30 to 40 minutes per pound.

What you need to smoke a turkey:

The first thing you will need for a good smoked turkey is a good turkey. Now, whether you are going to hunt your own or buy one, make sure it is a fresh turkey. This means an all natural turkey without injections and solutions. I know this isn't always cheap or easy, but if you can get one, then I recommend it. If you do pick up a frozen turkey, always follow the instructions for defrosting. Also do not get too large of a turkey. A 20 pound turkey will take 10-14 hours and larger turkeys greatly increase food contamination risks. A 12-16 pound turkey will be good and if you need more, try smoking two turkeys.

You will need a smoker, a good meat thermometer, a good hardwood like cherry or apple, and some patience. For the smoker you can use a kettle style grill if you are familiar with low temperature cooking in it. Most people don't cook turkeys very often, so even if you are a master of smoked brisket or low n' slow barbecue ribs, you should pay particular attention to what you are doing. Nothing can take the place of experience.

The good meat thermometer is a must. It should read fast and be very reliable. For the wood, I recommend a fruit wood because the flavor works best with turkey. Something like a cherry or apple would be good, though hickory and oak can add a nice flavor as well. Be careful not to over smoke a turkey, especially if you are doing a long smoke.

Smoked turkey has a different color and texture than oven roasted turkey. The meat may appear pink and have a smoother texture. This is normal. The smoking process causes a chemical change in turkey that changes the color of the flesh. As long as the turkey registers a temperature of 165 degrees F. it is safe to eat no matter the color.

The Stok Quattro is truly a unique gas grill. The two porcelain coated cast iron cooking grates have round, removable sections in the middle that can be swapped out for accessories like a pizza stone, a griddle, or a vegetable basket. The best part is that these accessories come standard and are not an additional expense. You even get a place to store these accessories in the cabinet and you get a special tool to remove them while hot. This means you can switch between the different components without turning off the grill or even breaking pace, with the exception of the pizza stone which cannot be gripped by the tool.

Beyond this, the Stok Quattro is a standard 4-burner gas grill. The 48,000 BTUs are plenty to heat the 475 square inch primary grilling space. The porcelain coated cooking grates are heavy enough to give you good heat transfer and grill marks though the pop up design makes using a spatula a little clumsy (probably not enough to bother you though). Though it doesn't have any other extras, the design is attractive and modern and the construction is fairly good.

This is a new grill from a manufacturer that hasn't had a lot of success in the U.S. market yet though they have been around for years. If successful we could be looking at a large product line. I would suggest that if you are only looking for a grill to cook burger and steaks that this might not be the grill for you. As a standard gas grill it is okay. It is the accessory system that really makes this gas grill stand out.

The Weber Summit E-670 is a super featured gas grill. Having everything that the E-470 has, this model adds two extra burners and takes the primary grilling space to 624 square inches. While the extra features on this grill cut away some of the grilling space (the E-620 has 693 square inches). This black grill (really the doors and hood are black, the rest of the grill is is grey painted steel) lists for $2,599USD but can be found for quite a bit less if you do your shopping.

The Summit S-420 is the same grill as the E-420 except this one has stainless steel body parts in place of the black. While the only major feature on this grill is the 12,000 BTU side burner, there are so many standard features on the Summit grills that you really shouldn't feel left out with this one. For instance, the propane tank gets hung on a scale and that scale feeds a push button gizmo on the control panel so you can see how much fuel you have without having to bend over. Also, this grill like all the Summit grills is available in Propane (LP) or Natural Gas, but they can not be converted so get the one you need. One note, while this says it is stainless steel grill, only the doors and hood are stainless

Weber Summit S-460

The Weber Summit S-460 is the custom insert version of the Summit S-470. You get all the features of the S-470 minus the side burner (though an optional side burner unit can be purchased) since this grill has no side tables. This is more expensive than the freestanding model and since it is an unusual shape for a custom enclosure make sure you know what you are getting into before you buy.

It loses the side burner since this grill doesn't have side tables, but this grill does have all the other features including the sear, smoker, and rotisserie burners. Despite the fact that this grill doesn't have side tables, casters, a back, etc. it does cost more, listing for $2,799USD, though you can find it for less typically. The Summit inserts are not like most grill head inserts. This insert has a full cabinet below which can be an advantage or disadvantage depending on your structure.
